Rutabaga and Potato Salad

Speaking of rutabagas, here’s an interesting recipe I’m trying this weekend. Rutabagas have such a lovely sweetness. If you don’t want to serve them by themselves, they work beautifully in any vegetable soup or roasted along with other roots like carrots, beets and parsnips. This recipe comes from wholeliving.com.

Broccoli Home Fries

Tender sweet broccoli should be an easy sell, but if there are reluctant broccoli eaters at your house, try adding them to that perennial favorite – homefries. Use all olive oil if you prefer. Or use the onions and garlic scapes from the box if you wish. This recipe could accommodate most anything. What doesn’t go with potatoes?
